Barbecue Chili

A bowl of chili topped with shredded cheese and a jalapeño slice.

3 Tbl. Olive Oil
2 Med green peppers diced
3 lbs. lean Chopped meat (Ground beef or turkey)
2 – 40 oz. cans red kidney beans drained
2 Beers your choice, no light please
1 Bottle RICHARD’S VT MADE BARBECUE SAUCE
Flavor of preference: Mild, Hot, Hottest
1 – 28 oz can of crushed tomatoes
1 ½ Tbl. Kosher or sea salt
¾ Cup Catsup
1 Tbl. Oregano
3 Large Onions, diced
2 Tbl. Chopped garlic
¾ Tsp. Cayenne pepper
6 Tbl. Chili Powder

Saute the onions, green peppers, garlic and oregano in oil. Add chopped meat, chili powder, salt and cayenne. Cook 15 minutes on medium heat. Add beer and crushed tomatoes: cook for 15 minutes more. Add kidney beans, catsup, and RICHARD’S BARBECUE SAUCE. Simmer about 1 hour or until desired consistency.
